This is the story of Barbara, my mum, who was diagnosed with type 2 diabetes when she was in her late 60s. She was given diabetes medication and subsequently insulin injections which she took every day, sometimes twice daily, for over 20 years. In 2021 after graduating as a nutritional therapist, I made it my priority to help alleviate her symptoms and reduce the amount of insulin she needed on a daily basis. In this book, I explain how and why she developed the disease, the horrific consequences she suffered, and how after 6 months of the dietary plan I implemented, she no longer needed insulin, much to the delight and amazement of her GP. The book also includes my top tips for managing type 2 diabetes, the top 5 foods I recommend you avoid, what the "Beat T2D" ideal plate consists of, and a sample 7-day plan. There is also a chapter featuring some of the recipes I mention in the book. This book combines the moving, sometimes heart-wrenching story of a much-loved mum who passed away in December 2022, with a simple guide for those diagnosed with prediabetes or diabetes, as well as anyone wanting to lower their blood sugar levels and/or know more about how to prevent type 2 diabetes. It has been written for people like my mum with the hope that it will help them make the changes to their diet and lifestyle to prevent, slow down, or even put into remission this life-threatening disease. This book was written as a homage to Barbara by her daughter, Leila, AKA the Rainbow Goddess.
